First make the dressing. Mix all the dressing ingredients together and season to taste.

Now toss all the salad ingredients in a serving bowl, then drizzle over some of the dressing, serving the rest of the sauce on the side for people to add as needed.

  • 2 celery sticks, sliced diagonally
  • 2 apples, cored and sliced into wedges

  • 100g (3½oz) walnut halves
  • 2 x 70g packs rocket leaves
  • 1 x 270g pack chicory, leaves separated
