Peel and roughly chop the potatoes and boil until just tender. Meanwhile, heat the vegetable oil in a frying pan and fry the pepper, onion and bacon until the onion is soft and golden and the bacon crisp.
Drain the potatoes and add to the onion and bacon mixture in the frying pan. Toss well, drizzle with salad dressing and season to taste.
