A deliciously refreshing combination of creamy, chilli-infused feta and sweet, juicy watermelon. This canapé is simple to make and is sure to fire up your Christmas party. If you want, you can marinate the feta up to 24 hours in advance, leaving you with a couple of hours to assemble before serving. See method

Ingredients

  • 200g feta, cut into 2cm (3/4in) cubes
  • pinch dried chilli flakes
  • 1 tsp sumac (optional)
  • 1 lemon, zested and juiced
  • 2 tbsp basil-infused oil, plus extra for drizzling
  • 1/2 small watermelon, deseeded and cut into 3cm (1in) cubes
  • 25-30 small basil leaves

Method

  1. In a bowl, combine the feta with the chilli flakes, sumac (if using), lemon zest and juice and the basil oil. Cover and leave to marinate for at least 30 minutes.
  2. Arrange teaspoons on a tray and top each with a cube of watermelon, feta and a basil leaf. Drizzle with basil oil.
