Welsh cakes with fruit recipe

The perfect afternoon treat to celebrate St David's Day! These light, fruity cakes are even more delicious when toasted and buttered.

  1. Sift together the flour, baking powder and salt.  Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs.  Add the sugar and sultanas.  Add the egg and sufficient milk to bind the mixture together.  
  2. Place on a board and roll out to about 1/2-1cm. Using a 6cm pastry cutter, cut into round shapes, about 20.   
  3. Heat a heavy based frying pan or flat griddle pan and lightly grease. Cook the cakes for about 3-4 minutes on a gentle heat. Serve cakes hot and buttered.
