Cook the spaghetti
in a large pan of boiling water for 8 minutes, until al dente, then drain, reserving a cupful of pasta water. Add the beaten eggs
and toss with the spaghetti until well coated. Toss in the prawns
, adding a splash of pasta water to create a silky sauce. Leave to sit for 1 minute until the prawns are warmed through, then stir in most of the parsley
. Serve immediately with the remaining parsley scattered over the top and extra Parmesan, if you like.
