Tikka spiced chicken crown with a date and tamarind chutney, and coconut and coriander sauce

Serve up an elevated Indian meal at home with this tender tikka spiced chicken crown. It’s covered in an aromatic tikka spiced yogurt and served alongside a tangy date and tamarind chutney for a touch of sweetness, and cooling coconut and coriander sauce.

Serves: 2

Ingredients:
Tesco Finest Chef’s Collection Tikka Spiced Chicken Crown
Bombay potatoes and wilted spinach, to serve (optional)

You will need: a baking tray, pair of tongs, sharp knife

Method:

1. Preheat the oven to 200°C, fan 180°C, Gas 6. Decant the meat and juices from the pouch into the foil tray and place skin side up. Place in the centre of a pre-heated oven and cook for 20 minutes.

2. Remove from the oven and pour the contents of the tikka spiced yogurt over the chicken and evenly coat with the back of a spoon. Cook for a further 15 minutes for maximum succulence.

3. Rest for 5 minutes before serving.

4. For best results, carve the chicken off the bone and slice across the width of the breast.

5. To plate, open the sachet of coconut and coriander sauce and spoon onto the plate. Place the sliced chicken on top and serve the date and tamarind chutney on the side.
