Ingredients

  • 60g plain flour
  • 2 tbsp cornflour
  • 165g pack Tesco Finest jumbo king prawns
  • 2 x 280g packs Tesco Finest skinless and boneless cod loins, cut into 2cm chunks
  • 2 tbsp extra-virgin olive oil, or oil spray
  • 3 tbsp light mayonnaise
  • 1 tbsp natural Greek-style yogurt
  • 2 garlic cloves, 1 finely crushed and 1 finely chopped
  • 15g curly leaf parsley, finely chopped
  • 1 lemon, zested and cut into wedges

    Method

    1. Mix the plain flour and cornflour together in a bowl until evenly combined. Working in batches, toss the prawns and cod in the flour mix until evenly coated.
    2. Place the cod and prawns on the shelf of the air-fryer in a single layer, brush or spray all over with oil and cook at 200°C for 8-10 mins until crisp, evenly golden and cooked throughout. Cook in batches, if needed.
    3. Meanwhile, in a bowl, mix together the mayonnaise, yogurt and crushed garlic together until smooth. Then, in another bowl, add the chopped garlic, parsley and lemon zest and mix together.
    4. Once cooked, pile the prawns and cod into a serving dish alongside the aïoli and sprinkle with the parsley gremolata. Serve with lemon wedges.

    Tip: To make this recipe without an air fryer, heat 2-3cm neutral oil in a deep frying pan over a medium heat. When the oil reaches 180°C (or a breadcrumb sizzles immediately when placed in the oil) carefully fry the fritto misto in batches, for 3-4 minutes until golden and crisp. Take care not to overcrowd the pan. Remove from the oil with a slotted spoon onto a plate lined with kitchen paper.
