This spicy green sauce is very popular is Peru. With its fresh coriander and fiery jalapeños it will pack a punch on any dinner table or as a perfect match to a summer BBQ.
Put all the ingredients in a small food processor and blend until smooth. If you like a bit more of a kick, keep the seeds in the chillies. If you don't have fresh jalapeños you can always use jarred, but make sure you don't add any of the liquid from the jar.
Season to taste with salt and pepper. Adjust the consistency with a little water if necessary.
Serve with sweet potato fries.
