This vibrant dip can be ready in no time and is a wonderfully healthy, too. Whip up a batch to store in the fridge for whenever the urge to snack hits!

  1. In a food processor, whizz the artichoke hearts, baby spinach, pine nuts and lemon juice, until smooth. Gradually add the olive oil, until the mixture reaches a dipping consistency; season.
  2. Enjoy with Baked beetroot and sweet potato crisps or Carrot and mixed seed crispbreads.
