  • handful baby spinach
  • 2 tbsp pine nuts
  • juice of half a lemon
  • 1-2 tbsp olive oil
  • salt
  • pepper

  1. In a food processor, whizz the artichoke hearts, baby spinach, pine nuts and lemon juice, until smooth. Gradually add the olive oil, until the mixture reaches a dipping consistency; season.
  2. Enjoy with Baked beetroot and sweet potato crisps or Carrot and mixed seed crispbreads.
