Get your summer berry kick now and long after the season’s gone with this delicious and so-easy strawberry coulis. Drizzle over ice cream, panna cotta or cheesecake, enjoy on porridge or pancakes for breakfast, or stirred through yogurt for a healthier treat. Ingredients

  • 400g strawberries, hulled and quartered
  • 80g caster sugar
  • juice of 1 lemon

Method

  1. Put the strawberries (or any summer berries), caster sugar and lemon juice in a saucepan over a medium-high heat and bring to a simmer, stirring constantly.
  2. Reduce the heat to medium and simmer for 12 mins or until thickened and broken down, stirring occasionally. Remove from the heat and leave to cool completely.
  3. Use a stick blender to blitz until smooth, then pass through a sieve into a clean jar or sealable container and store in the fridge for up to a week. Serve drizzled over ice cream, desserts or breakfasts.
