If you love crumpets with savoury toppings, you'll love this English breakfast-inspired crumpet bake with all your favourite cooked breakfast ingredients. It's ideal if you're looking for something different for a weekend brunch that's also quick and easy. It's so delicious, you might want it for dinner too! See method

Ingredients

  • butter, to grease
  • 4 sausages
  • 3 eggs
  • 100ml semi-skimmed milk
  • 60g mature Cheddar, grated
  • 6 Tesco crumpets, halved
  • 8 cherry tomatoes, halved
  • 30g baby spinach
  • 2 tbsp finely chopped chives​

    Method

    1. Preheat the oven to gas 6, 200°C, fan 180°C. Grease a small ovenproof dish with butter.
    2. Place the sausages on a baking tray and cook for 20 mins. Once cool enough to handle, cut into chunks.
    3. Whisk the eggs, milk and cheese together until well combined.
    4. Arrange the crumpets in the dish and layer with the sausages, tomatoes and spinach. Pour over the cheesy egg mix. Bake in the oven for 15 mins until golden and the cheese is fully melted.
