Ingredients

  • 150g broccoli florets
  • 75g peas (defrosted if frozen)
  • handful mint leaves
  • 1 garlic clove
  • 1 tbsp lemon juice

Method

  1. Steam the broccoli florets for 10 mins, or until tender, adding the frozen peas for the last 3 mins. Leave to cool.
  2. Blitz in a food processor with the mint leaves, garlic and lemon juice, until chunky or smooth. Season.
  3. Spoon into a bowl; top with extra mint leaves.
