Honey & Co's colourful slaw adds plenty of crunch from the red cabbage and sweet Pink Lady apples. Make the slaw the night before for extra pickling time and more flavour! See method

Ingredients

  • 1 small red cabbage, trimmed and finely shredded
  • 1 tsp salt
  • 1 tbsp caster sugar​
  • 3 tbsp white wine vinegar
  • 2 Pink Lady apples, thinly sliced
  • 1 red chilli, thinly sliced
  • 30g fresh mint, leaves shredded
  • 3 tbsp olive oil

Method

  1. Put the red cabbage in a bowl and sprinkle over the salt, caster sugar and white wine vinegar; mix well. Set aside for 25 mins, then mix until the cabbage softens.
  2. Just before serving, add the sliced apples, red chilli, fresh mint, and olive oil. Mix well to combine.
