Who said salads can't be enjoyed in the cooler months? This colourful salad will fill you up with slices of red and white cabbage, red peppers and red onion. 

  1. In a large bowl combine the cabbages, red pepper, onion and parsley. Add 2/3 of both the pomegranate seeds and walnuts then toss to combine.
  2. In a small bowl or jug mix the vinegar, oil, mustard and lemon juice. Season then toss into the slaw until lightly coated.
  3. Scatter with the remaining pomegranate and walnuts to serve.
