Packed with beans, Cajun spice and feta cheese, this flavour-filled vegetarian burger makes for a delightful dish that will fuel the whole family.

  1. Heat 1/2 tbsp oil in a frying pan. Add the onion and cook for 5 minutes or until softened.
  2. Add the garlic, chilli and Cajun spice; cook for 1-2 minutes. Spoon the mixture into a bowl. Add the beans, lime juice, breadcrumbs, feta, parsley, and just enough beaten egg to bind everything together. Season and mix well. Divide the mixture into 4 and shape into patties. Chill for 15 minutes.
  3. Heat the remaining oil in the pan over a medium heat. Cook the burgers for 4-5 minutes on each side, until cooked through. Serve in the rolls, topped with the avocado, soured cream and rocket.

  • 1 green chilli, seeded and finely chopped
  • 2 tsp Cajun spice mix
