  • 100g (3 1/2oz) cashew nuts
  • 2 garlic cloves
  • 50g (2oz) Parmesan
  • large bunch basil
  • 150ml olive oil

  1. In a food processor, blitz the cashew nuts, garlic and Parmesan. Add the basil and blitz again. Then, leaving the processor running, slowly drizzle in the oil until it is all combined. Season to taste. Store in a jar and keep in the fridge for up to 1 month.
