This deliciously creamy cashew nut pesto makes the perfect accompaniment to pasta, chicken or even spread on some crackers. The cashew nuts add a buttery, creamy deliciousness and are a fun twist on classic pesto. 

In a food processor, blitz the cashew nuts, garlic and Parmesan. Add the basil and blitz again. Then, leaving the processor running, slowly drizzle in the oil until it is all combined. Season to taste. Store in a jar and keep in the fridge for up to 1 month.
