Try making your own stuffing this Christmas. This gluten-free version is made from finely chopped cauliflower, herbs, dried fruit and nuts. We've added bacon to ours, but you can leave it out to make this recipe vegan! See method

In a large frying pan or casserole pan, heat the oil over medium heat. Add the onion, celery, carrot and bacon, if using, to the pan and cook for 10 mins, stirring regularly or until beginning to brown.
Add the cauliflower, thyme sprigs and sage, season with salt and black pepper and fry for 5 mins.
Add the stock, bring to the boil and cook uncovered, stirring occasionally for 20-22 mins until the liquid has reduced.
Add the flaked almonds, sultanas and flat leaf parsley and cook for another 2-3 mins to let the flavours come together.
Tip: Make this dish vegetarian and vegan by omitting the bacon.
