Make this super salad to experience the nutty flavour of celeriac perfectly complemented by juicy apple and rounded off with a rich buttermilk dressing. See method
Ingredients
- 1/2 small head celeriac, peeled and julienned
- 1 celery stick, julienned
- 1 sweet apple, cored and sliced
- 16 purple grapes, halved
- 4 slices prosciutto, torn
- 2 slices sourdough bread, cubed and toasted
- 4 tbsp walnuts, toasted and roughly chopped
For the dressing
- 125ml (4fl oz) buttermilk
- 4 tbsp mayonnaise
- 30ml (2 tbsp) white wine vinegar
- 1 tsp black peppercorns
- ½ garlic clove, crushed

Method
- Put all the dressing ingredients in a lidded jar. Season and shake well.
- Put all the salad ingredients except the prosciutto, sourdough bread and walnuts into a large bowl.
- Pour the dressing over the salad and mix well. Divide between 4 plates, divide the prosciutto, sourdough cubes and walnuts between them equally, and stir through.
