Ingredients

  • 1/2 small head celeriac, peeled and julienned
  • 1 celery stick, julienned
  • 1 sweet apple, cored and sliced
  • 16 purple grapes, halved
  • 4 slices prosciutto, torn
  • 2 slices sourdough bread, cubed and toasted
  • 4 tbsp walnuts, toasted and roughly chopped

For the dressing

  • 125ml (4fl oz) buttermilk
  • 4 tbsp mayonnaise
  • 30ml (2 tbsp) white wine vinegar
  • 1 tsp black peppercorns
  • ½ garlic clove, crushed

Method

  1. Put all the dressing ingredients in a lidded jar. Season and shake well.
  2. Put all the salad ingredients except the prosciutto, sourdough bread and walnuts into a large bowl.
  3. Pour the dressing over the salad and mix well. Divide between 4 plates, divide the prosciutto, sourdough cubes and walnuts between them equally, and stir through.
