Cherry and hot honey halloumi skewers recipe

Salty halloumi, ripe and juicy cherries and sweet hot honey make for a taste sensation in these uber-easy summer skewers. They can be cooked on the barbecue or on a griddle pan. See our tip for cooking on the barbecue, below. See method

Ingredients

  • 2 tbsp clear honey
  • ½ tsp crushed chillies
  • ½ lemon, zested, plus 1 tsp juice
  • 225g pack halloumi, cut into 24 cubes
  • 300g pack Tesco Finest cherries, pitted
  • 10g fresh mint, leaves picked, finely chopped
  • 2 tbsp olive oil
  • black pepper

Method

  1. Put the honey, crushed chillies, lemon zest and juice in a bowl. Microwave for 20 secs or until runny; stir and set aside. 
  2. Alternately thread the halloumi cubes and cherries onto 8 skewers (soak in water for 10 mins if wooden). 
  3. Add ¼ of the mint leaves to a bowl with 1 tbsp of the hot honey, the olive oil and some black pepper; brush over the skewers. 
  4. Put a griddle pan over a high heat until smoking hot. Cook the skewers in batches for 5-6 mins, turning regularly, until charred. 
  5. Drizzle over the remaining hot honey and scatter with the remaining mint to serve.

Tip: To barbecue over charcoal, light about 30 mins before you want to cook. Wait until the flames have died down and the coals are white.
