  • 500g chicken mince
  • 200g cauliflower florets
  • 150g breadcrumbs
  • 50g Parmesan
  • ½ tsp garlic powder
  • 2 large eggs
  • carrot and cucumber sticks, to serve

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Meanwhile, add the mince, cauliflower, 50g breadcrumbs, Parmesan, garlic powder and 1 egg to a food processor and blend until combined.
  2. Place the remaining breadcrumbs in a shallow bowl and crack the other egg into a separate bowl and whisk. Line a baking tray with baking paper, then scoop out 1 tbsp of the chicken mixture and use clean hands to shape into a circular nugget. Dip in the beaten egg followed by the breadcrumbs, then place on the baking tray, then repeat until 24 nuggets are made (6 per person).
  3. Bake for 20 minutes, then allow to cool a little before serving with carrot and cucumber sticks and your favourite dipping sauce.

Tip: If you don’t have a food processor, you can combine all the ingredients (finely chopped cauliflower) by hand in a mixing bowl.
