Give cheese-on-toast an Indian street food spin with this triple chilli and double cheese version. With red, green and crushed chillies to add heat to gooey Cheddar and mozzarella, this cheesy snack packs a punch. See method

Ingredients

  • 1 tsp sunflower oil
  • 1 onion, finely chopped
  • 1 green chilli, finely chopped
  • 80g mature Cheddar, grated
  • 80g mozzarella, grated
  • ¼ tsp crushed chillies
  • 4 slices white bread, cut into triangles
  • 2 spring onions, thinly sliced
  • 1 red chilli, deseeded and thinly sliced
If you don't have any Cheddar, try using another hard cheese

Method

  1. Preheat the grill to medium. Heat the oil in a frying pan over a medium heat and add the onion and green chilli. Cook for 3-4 mins until soft, then transfer to a bowl. Leave to cool for 5 mins, then stir in the cheeses and the crushed chillies. Season.
  2. Put the bread triangles on a baking tray and scatter over the cheese mix. Grill for 4-5 mins until the cheese has melted and is golden. Scatter over the spring onions and red chilli. Serve immediately.
