Whisk together the ingredients for the marinade until smooth and use it to coat the pork spare ribs. Cover and leave to marinate for 30 minutes.
After marinating, heat the groundnut oil in a large wok over a moderate heat until hot. Stir-fry the pork ribs for 1 minute, then remove from the wok and dry on kitchen paper. Add the spring onions, onion, garlic, red chilli and peppers to the wok, stir-frying for 2-3 minutes.
Add the ribs back to the wok, then stir in the oyster sauce and water. Bring to the boil, then reduce to a simmer, cover the wok, and gently simmer the ribs for 12-15 minutes, stirring occasionally. Remove from the heat and arrange on a long platter. Serve immediately.
