A Christmas cocktail that makes the most of the season's produce. Use colourful clementine juice and mix with your choice of sparkling wine for the perfect refreshing tipple then garnish with jewels of pomegranate, if you like. See method

  • 10 clementines
  • 3tbsp pomegranate seeds
  • 750ml sparkling wine, well chilled

  1. Squeeze the juice from the clementines – you’ll need about 300ml (½pt) – and pour through a sieve to remove any pith or seeds.
  2. Divide the juice between six Champagne flutes and add a spoonful of pomegranate seeds to each. Top up with the sparkling wine and serve.

Tip: If you can't find any fresh pomegranates or seeds, simply add a dash of pomegranate juice.
