Squeeze the juice from the clementines – you’ll need about 300ml (½pt) – and pour through a sieve to remove any pith or seeds.
Divide the juice between six Champagne flutes and add a spoonful of pomegranate seeds to each. Top up with the sparkling wine and serve.
If you can't find any fresh pomegranates or seeds, simply add a dash of pomegranate juice.
