Ingredients

  • 250g (8oz) potatoes, peeled
  • 1 dressed crab
  • freshly ground black pepper
  • 2 spring onions, very finely chopped
  • 1tbsp finely chopped parsley
  • ½ red chilli, deseeded and finely chopped
  • 1 egg, beaten
  • 100g (3½oz) breadcrumbs
  • vegetable oil for frying

Method

  1. Boil the potatoes until soft and mash thoroughly. Fold in the dressed crab. Mix in the spring onions, parsley and chilli. Shape mixture into 12 small cakes about 4cm (1½in) across.
  2. Dip cakes into the egg and coat in breadcrumbs. Heat the oil in a shallow pan and fry the cakes on each side for 3-4 minutes. Serve with lime wedges, salad leaves and mayonnaise.
