Ingredients

For the dressing

  • 2tbsp extra-virgin olive oil
  • 1 shallot, finely diced
  • 1tbsp red wine vinegar
  • 1tsp honey

For the salad

  • 1 red apple
  • 150g (5oz) white crabmeat or 1 x 170g tin drained white crab meat
  • 1 celery heart (the inner stalks), thinly sliced, reserving leaves
  • 1 large handful wild rocket

Method

  1. To make the dressing, put the ingredients in a bowl, season with salt and pepper and mix well.
  2. Core and thinly slice the red apple into discs and arrange on the plate. Mix together the crab, celery slices and rocket leaves in a bowl, then arrange on top of the apple slices.
  3. Drizzle over the dressing, serving any remaining dressing on the side.
