Crispy pork and Chinese leaf stir-fry recipe

This speedy stir-fry is ready in just 20 minutes, perfect for busy weeknights. Chinese leaf adds a veggie crunch and be sure to fry the pork mince until it goes nice and crispy. Serve with your favourite chilli sauce, if you like! See method

Ingredients

  • 1½ packs (650g) Chinese leaf
  • 6 spring onions
  • 1 tbsp toasted sesame oil
  • 5cm piece of ginger, peeled and finely grated
  • 3 garlic cloves, crushed
  • 500g 5% fat pork mince
  • 2 tsp cornflour
  • 4 tbsp reduced-salt soy sauce
  • 1 tbsp rice wine vinegar
  • 1½ tsp clear honey
  • 2 x 250g packs microwave long grain rice
  • ½ tbsp sesame seeds

Method

  1. Chop up the Chinese leaf and finely slice the whites of the spring onions (reserving the greens). Heat the sesame oil in a heavy-based frying pan or wok set over a high heat and stir-fry the Chinese leaf and spring onions for 3-4 mins until just tender. 
  2. Add the ginger and crushed garlic, and fry for another min. Add the pork mince and fry, stirring occasionally, for 7-8 mins until all the liquid has evaporated. Press the mince down with a spatula for another 1-2 mins until it starts to crisp up. 
  3. Whisk the cornflour with ½ tbsp soy sauce until combined, then whisk in the remaining 3½ tbsp, rice wine vinegar, 1 tbsp water and clear honey. Pour into the pan and stir-fry for 1 min until sticky. 
  4. Microwave the rice to pack instructions and serve with the pork, topped with the spring onion greens and sesame seeds.
