Dorset apple cake recipe

This classic British bake is a great way to use up any apples you have at home. Fold juicy apples through a cinnamon-spiced batter then bake until golden. We likes ours served warm with a generous scoop of vanilla ice cream. See method

Ingredients

170g unsalted butter, softened, plus extra to grease
170g soft light brown sugar
3 medium eggs, at room temperature, lightly beaten
200g self-raising flour
1 tbsp ground cinnamon
1 tsp ground nutmeg
3 medium Bramley apples, peeled, cored and cut into 1cm chunks
2 tbsp cornflour
1 tbsp demerara sugar
vanilla ice cream or single cream to serve (optional)

No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method

Preheat the oven to 180°C, fan 160°C, gas 4. Grease and line a 20cm round, springform cake tin with butter and parchment.
Using an electric whisk, beat the butter and the soft brown sugar together for 5 mins until pale and fluffy. Gradually whisk in the eggs, adding 1 tbsp flour between each addition to prevent the mix from splitting. Fold in the remaining flour and cinnamon to create a smooth batter. Toss the apples in the cornflour until coated, then fold through the batter until evenly dispersed.
Spoon into the prepared tin, smooth the top with the back of a dessertspoon and sprinkle over the demerara sugar.
Bake on the middle shelf of the oven for 1 hr – 1 hr 10 mins until evenly golden and a skewer comes out cleanly when inserted in the middle. Leave to cool in the tin for 10 mins before transferring to a wire rack to cool completely.
Serve with a scoop of vanilla ice cream or a pour of single cream.
Store any leftovers in an airtight container in the fridge for up to 3 days. The cake can be frozen for up to 1 month. Defrost at room temperature.
