This classic British bake is a great way to use up any apples you have at home. Fold juicy apples through a cinnamon-spiced batter then bake until golden. We likes ours served warm with a generous scoop of vanilla ice cream. See method

Ingredients

  • 170g unsalted butter, softened, plus extra to grease
  • 170g soft light brown sugar
  • 3 medium eggs, at room temperature, lightly beaten
  • 200g self-raising flour
  • 1 tbsp ground cinnamon ​
  • 1 tsp ground nutmeg
  • 3 medium Bramley apples, peeled, cored and cut into 1cm chunks
  • 2 tbsp cornflour
  • 1 tbsp demerara sugar
  • vanilla ice cream or single cream to serve (optional)
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Grease and line a 20cm round, springform cake tin with butter and parchment.
  2. Using an electric whisk, beat the butter and the soft brown sugar together for 5 mins until pale and fluffy. Gradually whisk in the eggs, adding 1 tbsp flour between each addition to prevent the mix from splitting. Fold in the remaining flour and cinnamon to create a smooth batter. Toss the apples in the cornflour until coated, then fold through the batter until evenly dispersed.
  3. Spoon into the prepared tin, smooth the top with the back of a dessertspoon and sprinkle over the demerara sugar.
  4. Bake on the middle shelf of the oven for 1 hr – 1 hr 10 mins until evenly golden and a skewer comes out cleanly when inserted in the middle. Leave to cool in the tin for 10 mins before transferring to a wire rack to cool completely.
  5. Serve with a scoop of vanilla ice cream or a pour of single cream.
  6. Store any leftovers in an airtight container in the fridge for up to 3 days. The cake can be frozen for up to 1 month. Defrost at room temperature.
