Bring together two classic desserts with this moreish summer medley. The ultimate American snack, s'mores, combines with traditional British Eton mess for an irresistible treat. Sandwich gooey marshmallows, melted dark chocolate, crisp meringue and fresh strawberries between crunchy malted milk biscuits and enjoy. See method

  • 16 malted milk biscuits
  • 16 marshmallows
  • 50g dark chocolate, cut into 8 pieces
  • 8 large strawberries, thickly sliced
  • 3-4 mini plain meringues, broken into small chunks

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Space half the biscuits, bottom-side up, over a baking sheet. Top each with a marshmallow and bake for 5-6 mins until the marshmallows start to melt.
  2. Add the rest of the biscuits to the tray, bottom-side up and top each with a chocolate chunk. Return to the oven for 2 mins until the chocolate just starts to melt.
  3. Top the chocolate-topped biscuits with some strawberry slices and meringue chunks, then flip a melting marshmallow biscuit on top of each and sandwich together.
