Ingredients

  • 5 plain mini meringues
  • 2 x 90g packs 9 all-butter pastry tartlets
  • 1 heaped tsp mango and passion fruit yogurt
  • 2-3 passion fruits

Method

  1. Crumble the meringues into a bowl. Divide half of the crumbled meringues between the pastry tartlets.
  2. Top each with the mango and passion fruit yogurt, then scatter over the remaining meringue.
  3. Scrape out the seeds from the passion fruits; drizzle over the tartlets.

Tip: To avoid soggy pastry, assemble the tartlets just before serving.
