Ingredients

  • 4 sprigs of fresh herbs, such as rosemary, mint, thyme
  • 40g fresh berries, such as cranberries, blueberries, blackberries, raspberries or pomegranate seeds
  • 200ml fresh clementine or orange juice
  • 400ml sparkling water

Method

  1. Place 2 ice cube trays on a flat tray that will fit in your freezer.
  2. Pick the herb leaves and evenly scatter into the ice cube trays, then dot 1 or 2 berries into each compartment.
  3. Slowly top up each compartment with water, then carefully transfer to the freezer for 2-3 hrs, or until needed.
  4. To make your festive drink, divide the clementine juice between 4 glasses, click a couple of ice cubes into each glass, then top up with sparkling water.

Tip: The zest of citrus fruit, such as limes, oranges, tangerines, clementines or grapefruit, would also add a lovely zing and freshness to your flavoured ice cubes. And, if you’re feeling extra fancy, edible flowers look beautiful too.
