Fava (or broad) beans have a creamy texture and sweet flavour that pairs well with rich and salty ingredients like bacon, anchovies and pecorino cheese. Try them in this healthy salad recipe with garlic, lemon zest, fresh tomato and slivers of crispy prosciutto. See method
Ingredients
- 500g fresh or frozen broad beans
- 2 tbsp extra-virgin olive oil
- 1 garlic clove, chopped
- 1 lemon, zested, plus 2 tbsp juice
- 1 large tomato, seeded and chopped
- 4 slices prosciutto

Method
- Blanch the beans in a pan of boiling water for 1-2 mins, then drain and refresh under cold water. Drain, then pod.
- In a pan, heat the oil, garlic, lemon zest and juice and tomato. Add the broad beans and cook for 1-2 mins, until warmed through; season.
- Meanwhile, fry the prosciutto in a dry frying pan until crisp. Roughly chop and toss through the bean mixture. Serve.
