Ingredients

  • 500g fresh or frozen broad beans
  • 2 tbsp extra-virgin olive oil
  • 1 garlic clove, chopped
  • 1 lemon, zested, plus 2 tbsp juice
  • 1 large tomato, seeded and chopped
  • 4 slices prosciutto

Method

  1. Blanch the beans in a pan of boiling water for 1-2 mins, then drain and refresh under cold water. Drain, then pod.
  2. In a pan, heat the oil, garlic, lemon zest and juice and tomato. Add the broad beans and cook for 1-2 mins, until warmed through; season.
  3. Meanwhile, fry the prosciutto in a dry frying pan until crisp. Roughly chop and toss through the bean mixture. Serve.
