Try this great German-style potato salad with bacon, mustard and parsley as a side dish for grilled pork or boiled Polish sausages.
Simmer the potatoes in a pan of salted water until tender, about 10-15 minutes. Drain and put back in the pan to dry out. Halve the potatoes, or quarter, if larger.
While the potatoes are cooking, fry the bacon until very crisp. Remove from the pan and discard all the fat except 1 tablespoon. Heat the remaining fat and add the celery and onion. Season and sauté for 2-3 minutes. Add the vinegar, water, sugar and mustard. Simmer for about 5 minutes, or until syrupy.
Pour over the warm potatoes and gently toss. Add the parsley and toss again. Taste for additional seasoning and serve warm with the sausages.
