This delicious dish can be made on the barbecue in less than 10 minutes and combines classic teatime Madeira cake with exotic apricots to make a summer dessert packed with smoky, fruity flavours. See method

Ingredients

  • 4 apricots, halved, stoned and cut into wedges
  • 4 slices Madeira cake (250g in total)
  • 4 tbsp soured cream
  • clear honey, for drizzling
  • fresh mint, chopped, to garnish
  • flaked almonds, to garnish
If you don't have sour cream, use crème fraîche or yogurt

Method

  1. Put the fruit and cake directly onto the barbecue bars. Cook for about 2 minutes on each side, until lightly griddled. Remove from the grill and set aside to cool slightly.
  2. Divide the cake between serving plates and spread each with 1 tbsp soured cream and some grilled apricots wedges. Drizzle with a little honey, then top with a drizzle of honey, some mint and a sprinkling of flaked almonds. Serve immediately.
