Grab a tortilla chip and dip into this gorgeous guacamole. Simply stir sharp lime and fragrant coriander through creamy, mashed avocado, alongside chopped tomatoes for extra bite, and you’re good to go. This is the perfect guacamole recipe as part of a Mexican feast.

  1. Put the coriandertomato and lime juice into a large mortar or bowl. Season with a little salt, then crush with a fork or pestle.
  2. Remove the avocado flesh and discard the stone. Add to the bowl and then use the fork or pestle to roughly mash and mix together with the other ingredients. Serve alongside your favourite Mexican meal or with some tortilla chips.

Tip: To remove the avocado flesh, simply use a small sharp knife to cut the avocado in half lengthways. Then use your hands to twist and separate the two halves. Take a spoon and use this to scrape out the avocado flesh and around the stone, which you discard at the end.
