This simple chicken recipe turns a handful of ingredients into a hearty and delicious family meal. Chicken breasts are baked in the oven in a garlicky cream cheese sauce and served on a bed of rice. See method
Ingredients
- 200g 50% reduced-fat soft cheese with garlic and herbs
- 1 tbsp cornflour
- 1 vegetable stock cube, made up to 200ml
- 650g chicken breast portions
- 200g frozen sliced leeks
- 200g long grain white rice, rinsed
- 90g baby leaf salad
If you don't have any leeks, try using spring or white onions instead

Method
- Preheat the oven to gas 6, 200°C, fan 180°C.
- Mix together the soft cheese and the cornflour, and season. Slowly add in the stock, stirring until smooth.
- Arrange the chicken breasts in a large baking dish and scatter the leeks around and them.
- Pour over the soft cheese sauce and cover the dish with foil.
- Bake for 40-45 mins, taking the foil off after 20mins, until golden brown and the chicken is cooked through. 1. Meanwhile, put the rice into a saucepan and pour over 350ml boiling water from the kettle. Bring to the boil, cover with a lid and cook over a low heat for 15-18 mins, swirling the pan occasionally, until cooked. Set aside with the lid on to keep warm.
- Divide the rice between 4 plates. Put a piece of chicken onto each plate (dividing the breasts if necessary) and spoon over some creamy leeks. Serve with some salad alongside.
