Get ahead for the week without spending hours cooking with our simple freezer bag hack. Bung your prepped ingredients into a bag, freeze, then cook whenever you're ready. This chicken and pepper fajita mix tastes great loaded onto tortillas with soured cream and melted cheese. See method

Ingredients

  • 1 large red onion, thinly sliced​
  • 1 red pepper, deseeded and thinly sliced​
  • 1 green pepper, deseeded and thinly sliced
  • 3 large garlic cloves, finely crushed
  • 400g chicken breast mini fillets, thinly sliced
  • 30g sachet smoky fajita seasoning
  • 1 tbsp clear honey

To serve

  • 1 tbsp vegetable oil
  • 8 pack white tortilla wraps
  • 150ml soured cream
  • 80g mature Cheddar, coarsely grated
  • 15g fresh coriander, roughly chopped (optional)
If you don't have red onions, try using white, brown or spring onions

Method

  1. Tip the onions, peppers, garlic, chicken, fajita seasoning and honey into a large, freezer-proof bag. Seal and shake to combine, then freeze for up to 3 months. When you’re ready to serve, defrost fully in the fridge overnight.
  2. To cook, heat the oil in a large frying pan over a high heat. Add the fajita mix and cook for 8-10 mins, tossing frequently, until the chicken is cooked throughout.
  3. Warm the tortillas in the microwave on high for 30 secs until softened, then fill with the cooked chicken fajita mix. To serve, top with the soured cream, Cheddar and fresh coriander, if you like.
