Combining flavours of the Middle East, elevate lamb steaks with our fragrant rub recipe. Mix the spices, rub over the lamb, marinate and, voilà, you're ready to grill. This lamb steak recipe takes a bit of prep but the delicious results are totally worth it. Serve alongside fluffy couscous and creamy yogurt to finish off perfectly. See method

Ingredients

  • 3 tbsp olive oil
  • ½ tsp dried coriander
  • ¼ tsp ground black pepper
  • ½ tsp ground cumin
  • ¼ tsp ground cinnamon
  • ¼ tsp cayenne pepper
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • 1 clove of garlic
  • handful fresh coriander, roughly chopped, plus extra to serve
  • 600g lamb leg steaks

Method

  1. In a small bowl mix the oil, spices, garlic and coriander.
  2. Rub over the lamb steaks and leave in the fridge to marinate for at least 2 hours or overnight.
  3. Preheat the barbecue to medium-hot and then grill the lamb steaks – 4 minutes on each side for medium, or to your liking.
  4. Leave to rest for 10 minutes.
  5. Sprinkle with more coriander and serve with couscous and yogurt.
