  • 600g lamb leg steaks
  • 3 tbsp olive oil
  • ½tsp dried coriander
  • ¼tsp ground black pepper
  • ½tsp cumin powder
  • ¼tsp ground cinnamon
  • ¼tsp cayenne pepper
  • ¼tsp ground cloves
  • ¼tsp ground nutmeg
  • ¼tsp ground cardamom
  • 1 clove of garlic
  • hand full of fresh coriander roughly chopped

  1. In a small bowl mix the oil, spice powder, garlic and coriander. Rub over the lamb steaks and leave in the fridge to marinate for at least 2 hours or overnight. Pre heat the BBQ to medium hot, grill the lamb steaks for 4 minutes on each side for medium or to your liking. Leave to rest for 10 minutes, sprinkle with more coriander. Serve with couscous and yogurt.
