‘Chow is a street food snack that’s common in Trinidad,' says food writer Riaz Phillips. 'It’s a nice palate-cleansing "dessert" that isn't overly sweet. You could also add garlic and serve it as a side dish.' See method

Ingredients

  • 1 large cucumber
  • 2 mangoes, peeled, destoned and sliced
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • 10g fresh coriander, finely chopped
  • 1½ limes, 1 zested and juiced, ½ cut into wedges
  • 1 tsp jerk marinade (see tip, below)
  • ½ tsp crushed chillies
2 of your 5-a-day and a source of vitamin C

Method

  1. Slice the cucumber lengthways and run a teaspoon down the core to remove the watery seeds; discard. Turn flat-side down, thinly slice and transfer to a bowl. 
  2. Add all the other ingredients (except the lime wedges and crushed chillies), and gently mix with your hands. You can serve immediately, but for best results, refrigerate for at least 1 hr or up to 6 hrs. Scatter over the crushed chillies and serve with the lime wedges.

Tip: This recipe uses Riaz Phillips' homemade jerk marinade.
