‘Marmalade on toast’ sausage traybake recipe

An all in one sausage traybake is exactly what you need for those busy weeks. The secret here is marmalade... Used to glaze the sausages and also to create a fun ‘marmalade on toast’-style topping. Give it a go! See method

Ingredients

  • 750g baby potatoes, sliced into 1cm discs
  • 2 red onions, cut into chunky wedges
  • 3 sprigs thyme, leaves stripped
  • 2 tbsp olive oil
  • 8 sausages
  • 2 tbsp marmalade
  • 1 tbsp soy sauce
  • 100g baby spinach

For the topping

  • 30g butter
  • 2 tbsp marmalade
  • ½ red chilli, finely chopped​
  • 1 garlic clove, finely sliced
  • 3 sprigs thyme, leaves stripped
  • 50g panko breadcrumbs​
If you haven't got any baby potatoes, try dicing a large white potato instead

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Place the potatoes, onion wedges and thyme leaves on a large baking tray or dish. Drizzle over the olive oil, season and toss to combine. Arrange the sausages on top, then bake in the oven for 20 mins.
  2. In a small bowl, mix the marmalade and soy sauce with ½-1 tbsp warm water until it’s a drizzling consistency. Pour over the sausages and potatoes and return to the oven for 15 mins. 
  3. Meanwhile, make the topping. Melt the butter over a medium-high heat in a frying pan and add the marmalade, chilli, garlic and thyme. Cook for a couple of mins before stirring in the breadcrumbs. Fry for 5 mins until the breadcrumbs turn golden. Set aside, the mixture will crisp up as it cools. 
  4. Add the spinach to the sausages and potatoes and return to the oven for 5 mins to wilt. Stir it in amongst the veg. 
  5. Serve in bowls with the crispy ‘marmalade on toast’ topping.
