For a one-pan family meal, try this Mediterranean goujon traybake. Swap chicken goujons for Tesco Plant Chef Breaded Goujons and roast with sweet potatoes, peppers, olives and juicy vine tomatoes as an easy vegan dinner. See method

Ingredients

  • 4 sweet potatoes, peeled and cut into chunks
  • 3 mixed peppers, roughly chopped
  • 2 x packs Tesco Plant Chef Breaded Goujons
  • 220g pack Piccolo cherry tomatoes
  • 50g black pitted olives
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • pinch chilli flakes (optional)
  • 15g basil, roughly chopped

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C.
  2. Add the sweet potatoes, peppers and goujons to a large roasting tin. Top with vine tomatoes and scatter with olives.
  3. Drizzle over the oil and sprinkle with oregano and chilli flakes (if using). Stir to coat the goujons and veg.
  4. Roast for 25-30 mins or until the sweet potatoes are tender. Scatter with basil to serve.
