70ml strong coffee
250g mascarpone
200ml double cream
1 tsp vanilla extract (optional)
4 mini rolls, each cut into 8 slices
1 square dark chocolate, or cocoa powder, for dusting

Method

Make up 70ml of strong coffee and allow to cool in a bowl.
Mix the mascarpone and the double cream together until smooth. If adding the vanilla, mix it in now.
Briefly dip 8 slices of mini roll in the coffee and arrange them in each glass, alternating with a spooned or piped layer of the mascarpone cream so that there are 4 layers in each glass.
Place the tiramisu pots in the fridge until ready to serve.
When ready to serve, grate a little dark chocolate over each glass or dust with cocoa powder.

Tip: For a boozy kick, try adding 2 tbsp dessert wine to the mascarpone mixture.
