- 30g pack fresh mint, leaves picked and finely chopped
- 2 tbsp white wine vinegar
- 1½ tsp caster sugar

Method
- Place the mint leaves in a bowl with the vinegar, sugar and a pinch of salt.
- Stir in the hot water until fully combined.
