  • 30g pack fresh mint, leaves picked and finely chopped
  • 2 tbsp white wine vinegar
  • 1½ tsp caster sugar
  • pinch of salt

  1. Place the mint leaves in a bowl with the vinegar, sugar and a pinch of salt.
