Roasting really brings out the gorgeous sweetness of Brussels sprouts and coating in butter and miso paste brings a wonderful, warming flavour. See method

Ingredients

  • 1 x 500g pack Brussels sprouts, trimmed
  • 40g unsalted butter
  • 3 heaped tsp miso paste
  • 1 tbsp olive oil

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C.
  2. Bring a large pan of salted boiling water to the boil, then add the Brussels sprouts. Cook for 4-5 minutes until tender. Drain.
  3. Meanwhile, melt the butter in a small saucepan over a medium heat. Remove from the heat and add the miso paste, mix well.
  4. In a roasting tin, toss the Brussels sprouts with the olive oil and butter miso mixture. Roast for 15-20 minutes until tender and slightly browned. Serve as a side or nibble.
