Ingredients

  • 150g natural yogurt
  • 7g instant yeast
  • 2 large carrots, peeled and coarsely grated (240g)
  • 1 eating apple, coarsely grated
  • 130g porridge oats
  • 500g wholemeal flour
  • 1 tsp fine salt
  • 15g chia seeds
  • 40g toasted mixed seeds

Method

  1. Put all of the ingredients, apart from the seeds, into a large mixing bowl with 450ml cold water and mix with a wooden spoon until well combined. Sprinkle most of the seeds over the top, cover the bowl and chill in the fridge overnight.
  2. The next morning, heat the oven to gas, 220°C, fan 200°C. Line two large baking trays with nonstick baking paper. Mix the seeds into the dough, then spoon 12 rounds of the dough across each tray in batches of six, leaving as much space between them as possible.
  3. Bake for 25-30 mins until golden and crusty and the bottom of the buns sound hollow when tapped. Allow to cool before eating.
