This simple recipe for a delicious piri piri marinade makes deliciously-spiced chicken that's sure to be an instant favourite with all the family. You can choose between chicken breasts or drumsticks, or even a mix of both based on your tastes. See method

Ingredients

  • 4 chicken pieces (breasts or drumsticks or a mix of both)
  • 1 x 180g pack Piri Piri Sauce
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges

Method

  1. Put the chicken pieces in a large bowl, add the sauce and rub all over. Cover with clingfilm, refrigerate and allow to marinate for up to four hours.
  2. Preheat the barbecue. Remove the chicken from the marinade, drizzle with the olive oil then place in a single layer on the barbecue. Cover with a lid if possible, and cook for 20-25 minutes, turning at least twice.
  3. Once the chicken is completely cooked through, serve on a platter with lemon wedges to squeeze over and a green salad.
