Piri piri rice with sultanas and apricots recipe

Try your hand at making this quick and easy classic Portuguese rice that's ready in under half an hour. This spicy rice is loaded with fiery seasonings, sweet dried fruit and aromatic herbs making it the ideal side dish or to have as a light lunch. See method
Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 tbsp piri piri seasoning
- 300g long grain rice
- 600ml vegetable stock
- 2 tbsp sultanas
- 8 dried apricots, chopped
White rice can always be swapped for brown (check cooking instructions for timings)

Method
- In a medium pan, heat the butter and oil. Stir the onion into the butter mixture, and then cover and sweat, over a low heat, until softened and translucent.
- Remove the lid and add the garlic and piri piri. Continue cooking, uncovered, for a further 2 minutes.
- Add the rice, stock, sultanas, apricots and some seasoning, and then bring to the boil.
- Reduce the heat and cover. Cook the rice for 13 minutes or until the liquid has been absorbed. Remove the heat and replace the lid with a clean tea towel (this will help to remove any excess moisture). Leave to stand for 5 minutes, before serving.
