When juicy pomegranates are in season you have to make this jewel-bright chocolate bark. With only 4 ingredients, it's great for edible gifting or snacking over the festive period. See method

Ingredients

  • 2 x 200g bars dark chocolate
  • 200g pomegranate seeds
  • 60g pistachios, chopped
  • ½ tsp sea salt flakes

Method

  1. Line a 26 x 38cm baking tray with nonstick baking paper. Finely chop the dark chocolate and melt in the microwave* for 2 mins in 30-sec bursts, stirring in between. Stir through 100g pomegranate seeds, scrape into the prepared tray and spread out in an even layer.
  2. Sprinkle over another 100g pomegranate seeds and the chopped pistachios, along with the sea salt flakes.
  3. Refrigerate until hard (about 1 hr), then break or cut into 18 pieces and package in layers of nonstick baking paper tied with a ribbon. Store in an airtight container in the fridge for up to 3 days.
