Red potatoes have deliciously buttery, creamy flesh that works brilliantly roasted alongside chipolata sausages and sweet Braeburn apples. This seriously comforting one-tray dinner is a definite family favourite. 

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Arrange the potatoes on a large baking tray and drizzle with 1 tbsp oil. Season, then roast for 15 minutes.
  2. Remove from the oven and add the sausages, apples, onion and sage. Drizzle with the remaining oil and toss with a large spoon. Cook for another 30 minutes, or until golden.
  3. Meanwhile, put the glaze ingredients into a pan and bring to a simmer. Cook for 10-12 minutes, until reduced and thickened. Pour half the glaze over the mixture for the last 5 minutes of cooking. Remove from the oven and drizzle with the remaining glaze to serve.

  • 1kg (2lb) red potatoes, thickly sliced
  • 2 tbsp olive oil
  • 12 chipolata sausages
  • 2 Braeburn apples, cored and sliced into rounds
  • 1 onion, cut into wedges
  • 1/4 x 30g pack sage, leaves picked
  • For the glaze

  • 200ml (1/3pt) cider
  • 1 tbsp grainy mustard
  • 1 tbsp redcurrant jelly
  • 2 sage leaves
