Be pretty in pink with this elegant rhubarb cordial. A touch of vanilla and star anise add extra flavour along with the sweet pink rhubarb. Dilute with soda water and ice for a sparkling and refreshing summer drink. See method

Ingredients

  • 400g rhubarb, roughly chopped
  • 275g caster or granulated sugar
  • ½ vanilla pod
  • 2 star anise

Method

  1. Put all the ingredients in a pan with 275ml water. Stir over a low heat until the sugar dissolves, then simmer for 10 mins or until the rhubarb has softened. Set aside to cool completely.
  2. Strain through a fine sieve into a jug, letting it drip slowly (don't push the fruit through or the cordial will be cloudy). Pour into a sterilised bottle* and chill for up to 1 month. Serve 1 part cordial to 4 parts soda water over ice with lime slices.

*To sterilise glass bottles, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C, until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
