Forget plain boiled veg and take your side dishes up a notch with this simple roasted broccoli and spiced yogurt. The broccoli becomes irresistibly crisp and caramelised in the oven, whilst a drizzle of creamy curried yogurt and crunchy pumpkin seeds are a simple finishing touch. See method

  • 700g broccoli florets
  • 1 tbsp olive oil
  • 150g Greek yogurt
  • 2 tsp lemon juice
  • 1 tsp curry powder
  • 30g pumpkin seeds, toasted

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Toss the broccoli in the olive oil, season and roast for 25 mins. 
  2. Mix together the Greek yogurt, lemon juice and curry powder until fully combined. 
  3. Transfer the broccoli to a serving dish, drizzle with the curried yogurt and top with the toasted pumpkin seeds.
